Long Day's Journey Into Night....


















Avocado Ice Pops


Avocado Ice Pops

Serves: 7
 
Cool off with these creamy & tart pops!
Ingredients
  • ¾ cup water
  • 6 Tbsp sugar
  • 1½ large avocado
  • 2 Tbsp lime juice
  • pinch of salt
Instructions
  1. Combine water and sugar in a small sauce pan over medium-high heat. Bring to a soft boil, stirring to dissolve sugar; remove from heat and set aside to cool.
  2. In the bowl of a food processor, combine the remaining ingredients and the cooled sugar water; puree.
  3. Divide mixture evenly among 7 (4 ounce) ice pop molds and freeze for 4+ hours, or until solid. Remove from freezer for 5-10 minutes before serving to easily release from molds.

just wish I could get on a cruise ship without a destination...

time spent quietly appeals to me now.

I hope all this eventually dissolves,
otherwise,
it will absolutely ruin my reputation !

  6. A cruise without a destination sounds kinda nice:) Never saw avocado pops..what a clever idea. Hope things cool down a bit..its been stifling here "Texas style" 95 with crazy high humidity! Makes me long for pre fall weather!

  8. It's OK Marsha. Summer does that. I'm leaving for England tomorrow and am busy making lavender wands with Chloe and haven't even begun to pack for the next two months. Go with it and have some relaxing summer times. :)

  9. Marsha don't worry about wiling a way a few days and what perfect time to do that then the summer. Once in a while I think you need to waste a little time before getting back to the grindstone. I personally do it most Sundays!

  11. Come back to Oregon to escape the high heat and humidity...relax without the malaise and recharge. It is 80 degrees in Portland today with a forecast of no heat higher than 84 degrees in the next week, relatively low humidity and no rain. Lots is happening here all summer (right now the annual Waterfront Blues Festival)! Seriously, Leslie in Portland
